Delicious does not describe it, and it's kinda good for me because it;s made with lovely ingredients.
The recipe is the Brown Eyed Bakers This site is quite possibly my worst nightmare given my current ambitions as it is full of amazing recipes. I'd like to think I picked a healthier one to try out but I think I might be fooling myself.
Today's recipe is Honey Oat Bread. AMAZING! Lovely served toasted with raspberry jam or peanut/nut butter (minor slip up on the sugar front with the jam, lets pretend it was 100% fruit ok)
Here is the thermi adapted recipe...
1¼ cups boiling water
1 cup rolled oats
2 tablespoons unsalted butter,
1½ teaspoons salt
¼ cup honey (I used raw organic honey)
1 cup wholemeal flour
1-2/3 cups bread flour
¼ cup milk powder
2 teaspoons instant yeast
1 tsp bread improver.
Soak oats, honey, salt and butter in boiling water until mixture cools to approx 37' or lower.
Add oat mixture to thermi bowl and check temperature. If the temperature is 37' carry on and add yeast, flours, milk powder and bread improver.
If not 37 degrees, add yeast and heat for 1 min on speed one. Once temperature is reached add the remaining ingredients and mix on speed 6 for 10 - 20 seconds, until the mix comes together.
Closed lid and knead on interval speed for 6 minutes.
Allow mixture to rest, in bowl or in silicone mat until it has doubled in size. Knock dough down gently and shape into a loaf shape, place in a bread tin and allow to rise until it has risen about the top of the tin (approx 1hr - 1 1/2hrs). Preheat oven to 180'C.
When oven is ready bake for 45 minutes. You may need to cover the loaf with foil for the last 10-15 minutes to prevent it over browning.
Turn out onto a rack and cool before slicing.
